
今日は穀物について。日本人は、主食としてお米を食べる。デンマークでは、ライ麦、オート麦、小麦などがそれに変わる。現代の人々は、あらゆるアレルギーを持っていがち。その原因の一つに、調理をする際に、人間が体内で消費がスムーズにいくようにするべき分解、工程がしっかりできていないからとアンマリーは言う。いわゆる’スローフード’がキーになってくるんですね!Here in Wisconsin we have Anne-Marie (a Danish lady) who has been studing Natural foods for over 30 years now. She has such a open mind and a worm heart and makes everyone so comfortable. Look at Shizuka, She is already smiling! Today's lesson is about multi grain cooking. Japanese eat rice as a staple food. Danish eat rye, oats, wheat. Nowadays a lot of people have allergies for a lot of different kind of foods. Anne- Marie says one of a big reason is that because people process their foods wrong so they don't get broken down enough. 'slow food' is the key!


Anne-Marie has grinder for wheat, oats, corn so they get fresh ground grains all the time! She is also making butter from organic whipping cream!

And these breads are sourdough breads. The dough is made by bacteria from the air and it takes a long time to rise, but it breaks down the grains into an extremely healthy form. Where as with yeast bread rises so quickly but doesn't break down the grains so well. It is important to raise bread slowly with natural yeasts or with bacteria like old days. Remember, even it takes long time to make sourdough but you can do a lot of things such as cleaning, reading books etc. You just don't want to forget the time and mess up the next step!

Anne- Marie also studied Japanese foods. She even makes and Natto at home. We have a lot of fermented food such as Pickles, Miso, Soy sauce. Denmark has similar foods like sauerkraut, Yoghurt, pickles etc. Shizuka asked her ' how about in the USA?' People came from everywhere. Here we mix European, Asian, South American and every type of food to make a new style. Unfortunately most people think 'Fast food' is the typical American food,,,,,,, but there are a lot of great foods in the USA.
